Bisteeya dinner demonstration : a Moroccan feast

I love to teach cooking and hear the sounds of pleasure that people make when they taste the food !

 Bisteeya is the national dish of Morocco.

i had a very small intimate group in the farmhouse.

We tasted two kinds, one more savory and rustic than the other.

We started with making the spicy harrisa sauce which we use at the Cafe instead of … i can t even pronounce ..please… whisper ..instead of  .. ketchup !! mon Dieu ! We nibbled on dates and figs as i showed how to assemble the different layers of shredded chicken, almonds ,coriander and scrambled eggs wrapped in phyllo dough , with the marvellous odor of cumin, ginger and cinnamon hovering over us. The dessert was an orange lemon curd genoise cake with fresh bloody orange slices and creme anglaise.
